I find it interesting how so many cultural foods have the origin of, “We have nothing else but these scraps, let’s just throw them together” – then future generations get so freaking precious about, “well, that’s not how that dish is supposed to be prepared!”
With that said, and this may earn me some ire from certain circles, I literally do not care about “authenticity” when it comes to food. The only time it may be relevant would be when I’m craving a specific type of flavor profile from a particular dish, but even then, if the cooks can create that same (or an even better) flavor profile using “inauthentic” ingredients, then that’s perfectly fine by me.
